2 cups ripe tomatoes, chopped |
1 teaspoon olive oil |
1/2 teaspoon salt |
2 tablespoons finely diced onions |
2 tablespoons chopped fresh basil |
1 teaspoon balsamic vinegar |
1/2 teaspoon black pepper |
Directions:
1. On a rimmed baking sheet, combine tomatoes, oil and salt. 2. Roast in a 450* oven for 10 minutes. Turn oven to broil and roast tomatoes until golden brown, about 5 minutes. 3. Transfer to a food processor. Add onion, basil, vinegar and pepper and pulse until smooth. 4. Serve immediately or refrigerate for up to 3 days. |
