Ingredients:
2 cups ripe tomatoes, chopped
1 teaspoon olive oil
1/2 teaspoon salt
2 tablespoons finely diced onions
2 tablespoons chopped fresh basil
1 teaspoon balsamic vinegar
1/2 teaspoon black pepper
Directions:
1. On a rimmed baking sheet, combine tomatoes, oil and salt.
2. Roast in a 450* oven for 10 minutes. Turn oven to broil and roast tomatoes until golden brown, about 5 minutes.
3. Transfer to a food processor. Add onion, basil, vinegar and pepper and pulse until smooth.
4. Serve immediately or refrigerate for up to 3 days.
