Roasted tomato and basil salsa |

Ingredients:
1 1/2 lbs plum tomatoes, quartered |
3 cloves garlic, lightly crushed |
2 tablespoons olive oil |
1/2 teaspoon salt |
1/2 teaspoon pepper |
10 fresh basil leaves |
Directions:
1. Heat oven to 325F degrees. 2. Combine all ingredients in large ovenproof skillet. 3. Bake until tomatoes and garlic are very soft, 1 hour. 4. Cool 10 minutes. 5. Coarsley chop tomatoes and garlic mixture. 6. Transfer to a serving bowl. 7. Serve with tostitos or foccacia. |
