Roasted Tomato and Basil Relish |

A simple, zestful relish that makes a quick and delicious hors d'oeuvre when served on toasted sourdough bread rounds. It's also nice for giving a flavor boost to roast chicken or fish. Ingredients:
1 pound plum tomatoes, seeded, very coarsely chopped |
1/2 cup chopped fresh basil or 1 tablespoon dried |
1/4 cup (packed) grated parmesan cheese |
2 tablespoons olive oil |
3 garlic cloves, minced |
1/4 teaspoon (scant) dried crushed red pepper |
Directions:
1. Preheat oven to 350°F. Combine all ingredients in 1-quart casserole. Bake until tomatoes are soft, about 30 minutes. Season to taste with salt and pepper. Cool to room temperature. |
