Roasted Tofu W/ Shiitake, Tofu, and Ginger Over Spinach |

roasted tofu and shiitake mushrooms. from 'The Skinny' Ingredients:
6 t soy sauce |
6 t vinegar(rice wine) |
3 t olive oil |
2 1/2 t honey |
2 1/2 t ginger, minced |
3/4 lb. shiitake mushrooms |
1 lb. firm tofu, sliced 1/2 thick |
4 c. baby spinach leaves |
Directions:
1. Preheat oven to 375F 2. Whisk together first 6 ingredients. Place mushrooms in a bowl and add enough marinade to coat. Toss to combine. 3. Arrange tofu in single layer in baking dish. Pour remaining marinade over. 4. Roast tofu for 20min. Then spread mushrooms on baking sheet and add to oven. Continue roasting both 10-20 min. 5. Put spinach on serving plate. Drizzle with some of marinade. Divide tofu and mushrooms among plates; serve. |
