Ingredients:
1 large sweet potato, peeled and cut into 1/2-inch cubes |
1 medium onion, cut into 1/2-inch wedges |
2 teaspoons extra-virgin olive oil |
1/4 teaspoon salt |
1/8 teaspoon pepper |
cooking spray |
Directions:
1. Combine first 5 ingredients in a large bowl; toss well. 2. Coat a nonstick baking sheet with cooking spray; add potato mixture, and arrange in a single layer. 3. Bake at 400° for 20 to 25 minutes or until potato is tender, stirring once. Serve immediately. |
