Roasted Sweet Potatoes and Apples |

The original of this recipe, which has been tweaked a bit, was found in the Sunset magazine's Best Recipes 2010 cookbook. Ingredients:
3 tablespoons extra virgin olive oil |
1/4 cup pure maple syrup |
2 tablespoons lemon zest, minced |
1 tablespoon fresh lemon juice |
1 tablespoon fresh thyme, chopped |
1 teaspoon salt |
1/2 teaspoon lemon pepper |
3 lbs sweet potatoes, unpeeled, cut into 1-inch chunks |
2 fuji apples, cored, unpeeled, cut into 1-inch chunks |
2 golden delicious apples, cored, unpeeled, cut into 1-inch chunks |
2 granny smith apples, cored, unpeeled, cut into 1-inch chunks |
Directions:
1. Preheat oven to 425 degrees F, then oil 2 large rimmed baking pans. 2. In a large bowl, whisk together the first 7 ingredients, before adding the rest of the ingredients, then toss to coat. 3. Spread the coated potatoes & apples in a single layer in the prepared baking pans & roast in the oven for about 40 minutes (or until potatoes are slightly browned & tender when pierced), turning chunks every 15 minutes. 4. Transfer to a platter & serve. |
