Roasted Squash with Gorgonzola and Maple Syrup |

From . Ingredients:
4 cups butternut squash, peeled, seeded and cut into 1/2 inch cubes |
1 tablespoon olive oil |
1 salt and pepper to taste |
1/4 cup gorgonzola, crumbled |
2 tsp maple syrup |
Directions:
1. Toss the squash in the olive oil with the salt and pepper. 2. Roast in a preheated 400F oven until tender, about 30-40 minutes, turning over about half way through. 3. Mix the roasted butternut squash and gorgonzola cheese. 4. Serve with a drizzle of maple syrup. |
