Roasted Squash Soup with Maple Glazed Bananas |

Delicious soup! Looks fancy too! Ingredients:
2 pound butternut squash, steamed |
1/2 cup milk, 1 |
1 cup water |
1 pinch of cinnamon |
1 banana, scooped into balls with melon baller |
1/2 cup pecans, toasted |
1 tablespoon maple syrup, for drizzling |
Directions:
1. Steam or bake the butternut squash. Discard peel. 2. Puree the squash in a blender along with the milk, water, and cinnamon until very smooth. Warm over low heat. 3. Ladle the soup into bowls. Garnish with the banana, pecans, and drizzle maple syrup on top. |
