Have seen these done so many times,finally gave them a try. Great way to use tomatoes. So sweet,even if not garden tomatoes. Ingredients:
4 small vine-ripe tomatoes |
extra virgin olive oil,for drizzling |
salt and fresh ground black pepper |
a few stems tyme,leaves chopped |
Directions:
1. Preheat oven to 300' 2. Put cooling rack over baking sheet. Slice tomatoes,horizontally,into thirds and arrange slices on rack. Put top and bottom of tomatoes cut side up on rack. 3. Dress tomatoes with oil,salt,pepper and thyme leaves. Roast 1 hour . 4. Remove tomatoes to a serving platter. |
