Roasted Shallots And Tomatoes

I have made this recipe so many times because roasting the shallots & tomatoes brings out the most flavor. This is also a great way to use up tomatoes that are past their prime for eating fresh.
Ingredients:
18 small shallots, peeled and halved
1/4 c. balsamic vinegar
1/4 c. olive oil
1-12 oz pkg. grape or cherry tomatoes
13/ c drained capers, plus 1 t brine from jar
salt & pepper
Directions:
1. Preheat oven 450. Combine shallots, balsamic and olive oil in medium roasting pan, toss to coat. Sprinkle with salt and pepper. Roast about 15 minutes until shallots are browned and tender. Add tomatoes and roast until soft and browned, another 15 minutes. Remove from oven. Add capers and reserved brine and stir to blend.
