Ingredients:
1 1/2 lbs large shallots, trimmed
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
3 sprigs fresh rosemary
Directions:
1. Preheat oven to 350. Arrange shallots in a shallow baking dish.
2. Sprinkle with salt and pepper and drizzle with olive oil.
3. Add the rosemary, cover with foil and roast for 30 minutes.
4. Uncover and roast for 25-30 minutes longer, until the shallots are tender.
5. Increase oven temperature to 450 and roast the shallots for 10 minutes, until browned.
