Roasted Shallot Vinaigrette |

Easy to make, great on spring greens or tomato basil and mozzarella (capreze salad) Ingredients:
6 - 8 cloves of garlic |
1 shallot |
1/4 cup extra virgin olive oil, plus more for drizzling |
coarse salt |
fresh ground pepper |
2 tbsp basalmic vinegar |
1/2 tsp dijon mustard |
1/2 tsp freshly squeezed lemon juice |
Directions:
1. Preheat oven to 400 degrees 2. Place whole garlic and shallots on parchment paper lined foil 3. Drizzle with oil 4. Season with salt and pepper 5. Wrap package and roast for 45 minutes 6. Set aside to cool 7. Remove peel from garlic and shallot 8. In food processor combine garlic, shallots, vinegar, mustard & lemon juice 9. With machine running add olive oil 10. Season with salt & pepper |
