I was invited to a potluck party and wanted to take something quick and easy. I looked around in the fridge and pantry, and came up with this asparagus recipe. -Lynn Brandt, Franklin, PA Ingredients:
1 1/2 pounds asparagus spears |
cooking spray |
1 1/2 teaspoons dark sesame oil |
1 tablespoon balsamic vinegar |
1 1/2 teaspoons sesame seeds, toasted |
1/2 teaspoon crushed red pepper |
1/8 teaspoon salt |
1/8 teaspoon black pepper |
1 tablespoon shaved fresh parmesan cheese |
Directions:
1. Preheat oven to 450°. 2. Snap off tough ends of asparagus. Arrange asparagus in a single layer on a jelly-roll pan coated with cooking spray; brush with sesame oil. Bake at 450° for 10 minutes or until crisp-tender. Remove pan from oven. Add vinegar, sesame seeds, and red pepper to asparagus, tossing gently to combine. Place asparagus on a platter; sprinkle with salt and black pepper. Top with cheese. |
