Roasted Salmon with Citrus and Herbs |

Everyone in my family loves salmon, even my four-year-old twin boys. There are never any leftovers when I make this dish. -Karen Ensign, Providence, UT Ingredients:
1 tablespoon finely chopped fresh parsley |
1 tablespoon finely chopped fresh thyme |
1 tablespoon minced garlic |
2 teaspoons grated lemon rind |
2 teaspoons grated lime rind |
1 teaspoon sea salt |
1/2 teaspoon freshly ground black pepper |
1 (2 1/4-pound) salmon fillet |
cooking spray |
Directions:
1. Preheat oven to 400°. 2. Combine first 7 ingredients in a small bowl. Place salmon on the rack of a broiler pan coated with cooking spray; place rack in pan. Rub parsley mixture over salmon. Bake at 400° for 15 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. |
