Basic recipe for an easy favourite. I always feel like I am cheating when I do this cause it's SO easy...but the depth of flavours quickly makes me forget all about that as I enjoy the sweetness of the veggies brought out by the roasting process. Read more ...YUM! Ingredients:
2 medium size parsnips - peeled and cut into spears |
1-2 carrots - peeled and cut into spears |
1 turnip - peeled and cut into wedges |
1 red bliss potato - cut into wedges |
1 large onion - cut into wedges |
4 cloves of garlic - slightly smashed |
extra virgin olive oil |
kosher salt |
freshly ground cracked pepper |
Directions:
1. Preheat oven to 450 degrees. 2. Toss all ingredients together well in a very large bowl. 3. Spread all veggies out on a baking sheet and roast for about 40 minutes, tossing once. 4. * this can be a side with some meat or a main vegetarian dish served with cous cous. |
