These potatoes go well with any meal! Be creative with the herbs and spices and they will be new each time!!
Ingredients:
10-15 medium red potatoes
olive oil
parmesean cheese
herbs and spices of your choice
**i like mrs. dash, garlic, and parsley
Directions:
1. Preheat oven to 350
2. Wash and quarter potatoes
3. **for faster cook time, use an onion chopper and dice potatoes into smaller pieces**
4. Coat in Olive oil
5. Sprinkle with cheese, herbs, and spices
6. Shake to coat
7. Pour into baking dish
8. Cover with tin foil for first 30 minutes
9. Remove cover and roast an additional 30 minutes or until potatoes are tender
