Cooking Light, December 2007. red potatoes, olive oil, kosher salt, flat-leaf parsley cvt Ingredients:
6 cups (quartered) red potatoes |
1 tablespoon olive oil |
1/4 teaspoon salt or 1/2 teaspoon kosher salt |
1/4 cup (flat-leaf) parsley, chopped |
Directions:
1. Preheat oven to 400°. Place potatoes in a large bowl, drizzle with olive oil, sprinkle with salt, and toss to coat. 2. Arrange the potatoes in an even layer on a baking sheet. Bake at 400° for 40 minutes, or until fork tender, turning once. Toss with the parsley and serve. |
