Roasted Red Potatoes With Lemon |

Red potatoes with lemon Ingredients:
3 lbs red potatoes, quartered |
salt |
ground pepper |
1/4 cup unsalted butter |
1/4 cup extra virgin olive oil |
6 tablespoons fresh lemon juice |
2 teaspoons dried thyme |
1 tablespoon lemon peel, grated |
3 tablespoons parsley, minced |
Directions:
1. Preheat the over to 375 degrees. 2. Butter a large shallow oven-proof casserole dish. 3. Add the potatoes and season generously with the salt and pepper. 4. Melt the butter with oil in a heavy saucepan over medium heat. 5. Add lemon juice, then pour over potatoes and toss well. 6. Sprinkle with thyme. 7. Bake for 1 hour. 8. Add lemon peel and toss to coat. 9. Continue baking until potatoes are tender and golden brown, about 15 minutes. 10. Sprinkle potatoes with minced parsley and serve. |
