Awesome potato salad and a nice change from the old mayo variety. Easy to put together and terrific!! From Southern Living. Ingredients:
2 tablespoons olive oil |
2 lbs red potatoes, diced |
1/2 onion, diced |
2 teaspoons garlic, minced |
1 teaspoon kosher salt |
1/2 teaspoon ground pepper |
10 slices cooked bacon, crumbled |
1 bunch green onion, chopped |
3/4 cup ranch salad dressing |
Directions:
1. Toss first six ingredients together and place in single layer on cookie sheet sprayed with Pam. 2. Bake at 425 degrees for 40 minutes, stirring occasionally. 3. Transfer to large bowl. 4. Toss remaining ingredients. Can be eaten warm or cold. We prefer it room temp to warm. |
