Roasted Red Peppers Stuffed With Tomatoes

easy peasy side dish or for a main meal veggie alternative
Ingredients:
4 large red peppers
8 tomatoes
sliced garlic
one tin of anchovies
extra virgin olive oil
ground black pepper
Directions:
1. cut the peppers lengthwise leaving on the stalks - looks more fancy!
2. place in an oven-proof dish
3. dunk tomatoes in boiling hot water leave until skins have softened - about 10 minutes and easy to skin chop into quarters
4. place 4-6 bits of tomato in each pepper
5. slice the garlic thinly and add to the tomato
6. place an anchovie or two on top
7. drizzle about a desert spoon of oil on top of each one
8. bit of black pepper
9. cook in hot oven for about 50 mins
10. yum yum
