Roasted Red Pepper Sauce (Curtis Aikens2)

Ingredients:
2 tablespoons olive oil
3 cloves garlic, chopped
1 small onion, chopped
4 red bell peppers, roasted, peeled, seeded and chopped
2 cups chicken stock
salt and pepper
Directions:
1. In a saute pan, heat oil. Saute garlic and onion until onion is translucent, about 3 to 5 minutes. Add bell pepper. Add stock and bring to a boil. Simmer for 10 to 15 minutes. Take off heat and puree in a blender. Season with salt and pepper.
