Roasted Red Pepper Sauce

Great over your favourite pasta. Use any peppers that you have on hand, yellow and orange make a nice sauce also.
Ingredients:
2 tbsp olive oil
1 cup roasted red peppers, chopped
1/2 cup diced red onion
1/2 cup chicken stock
2 tsp minced garlic
1 tsp fresh thyme, minced
1/2 tsp salt
1 tsp black pepper
Directions:
1. In a saucepan heat oil and add peppers, onion and garlic. Simmer on low-heat until onions are translucent.
2. Add chicken stock, thyme, salt and black pepper. Simmer for 15 minutes on low.
3. Allow to cool slightly then puree in a food processor.
4. Pour over pasta and serve.
