                    Great over your favourite pasta. Use any peppers that you have on hand, yellow and orange make a nice sauce also. Ingredients: 
                    
                        
                                                2 tbsp olive oil  |  
                                                1 cup roasted red peppers, chopped  |  
                                                1/2 cup diced red onion  |  
                                                1/2 cup chicken stock  |  
                                                2 tsp minced garlic  |  
                                                1 tsp fresh thyme, minced  |  
                                                1/2 tsp salt  |  
                                                1 tsp black pepper  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. In a saucepan heat oil and add peppers, onion and garlic. Simmer on low-heat until onions are translucent. 2. Add chicken stock, thyme, salt and black pepper. Simmer for 15 minutes on low. 3. Allow to cool slightly then puree in a food processor. 4.
