Great served with a crusty bread. Ingredients:
4 lg tomatoes, chopped |
1 lb mozzarella cheese, cubed |
1/2 c jarred roasted red peppers, chopped |
8-10 fresh basil leaves, chopped |
1/4 c olive oil |
1 clove garlic, minced |
1/2 tsp coarse sea salt |
black pepper, freshly ground |
1/2 lb salami, sliced thin (optional) |
1/2 c olives, your choice |
Directions:
1. Combine tomatoes, cheese, peppers, salami, olives and basil in a large bowl. Mix olive oil with garlic, salt and pepper; drizzle over tomatoe mixture and toss gently. |
