Roasted Red Pepper, Pepper Jack, and Pepperoni Sandwiches |

Can be prepared in 45 minutes or less. Ingredients:
1 round loaf sourdough bread (about 7 inches in diameter) |
1 cup grated pepper jack cheese (about 1/4 pound) |
1/2 cup fresh coriander sprigs, washed, spun dry, and chopped |
16 slices pepperoni |
two 7-ounce jars roasted red peppers, drained and patted dry |
Directions:
1. Preheat oven to 375° F. 2. Cut eight 1/2-inch-thick slices from center of sourdough loaf. In a small bowl toss together pepper Jack and coriander. 3. Make sandwiches on bread with pepperoni, roasted peppers, and cheese mixture. Bake sandwiches on a baking sheet in middle of oven until cheese is melted, about 5 minutes. |
