Roasted Red Pepper Hummus Soup |

I was in a hurry and added too much liquid to my hummus, but was delighted to call change it into a soup ..warm or cold...my 3 year old son *loved* it. What a great way to eat his veges. :) Ingredients:
2 roasted red peppers |
3 garlic cloves |
1 (16 ounce) can garbanzo beans |
1 onion |
2 cups chicken broth |
1/4 teaspoon kosher salt |
2 tablespoons olive oil |
Directions:
1. Roast the red peppers.I smoked mine on a Traeger. Saute onion, garlic in olive oil over medium heat. Add beans (with liquid), roasted peppers, and broth (If not vegetarian, use chicken broth). Blend. Garnish with diced tomatoes and feta cheese. Serve. |
