I love to have dips for company when they arrive, this is a recipe that I found in a regional magazine from here - Saltscapes - I haven't tried it yet, but it sounds so DELICIOUS that I just had to post it for everyone - couldn't wait until I tried it!! Ingredients:
1 (19 ounce) can chick peas, drained |
3/4 cup olive oil |
1/4 cup roasted red pepper (substitute with 1/2 tsp. chili flakes or cayenne pepper) |
1/4 cup fresh parsley, chopped |
1 1/2 teaspoons lemon juice |
2 garlic cloves, crushed |
1 teaspoon tahini |
1 teaspoon salt |
1 teaspoon pepper |
Directions:
1. Place all ingredients in blender and purée until smooth. Traditionally humus is served with warm or grilled pita bread; you can also serve it with vegetables or your favorite crusty bread. |
