Roasted Red Pepper Hummus |

Serve this as a dip or as a spread. It is low fat and very healthy. Serve with crackers, small pitas or vegetables. I do not have tahini in mine but feel free to add some or 1 Tablespoon low fat peanut butter. Ingredients:
15 ounces chickpeas, rinsed and drained |
1 cup roasted red pepper, rinsed and drained |
1 tablespoon olive oil |
2 tablespoons fresh lemon juice |
3 garlic cloves, minced |
1/2 cup sour cream |
1/4 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Add chick peas to processor and puree. 2. Add roasted pepper and remaining ingredients. 3. Puree until smooth. 4. Refrigerate. 5. Serve with cracker,small pitas, vegetables. |
