This dip combines the creaminess of the cheeses with the zesty tang of the roasted red peppers. Served with either crackers of corn chips, it's just SO tasty. Ingredients:
1 (7 oz) jar roasted red peppers, drained and diced |
3/4 pound shredded monterey jack cheese |
1 (8 oz) pkg. cream cheese, softened |
1 c mayonnaise |
1 tbsp minced onion |
1 clove garlic, minced |
2 tbsp dijon mustard |
Directions:
1. Preheat oven to 350 degrees. 2. In a mixer, combine roasted red peppers, both cheeses, mayonnaise, onion, garlic and Dijon mustard. Mix thoroughly. 3. Pour, and spread into a baking dish. Bake for 20 minutes, or until bubbly and lightly browned. Serve warm with miniature bread slices, crackers or tortilla chips. |
