Easy, delicious, good for you. Even my kids like it. Ingredients:
2 cans (15oz) garbanzo beans |
1 jar (11.5oz) roasted red pepper salsa |
1 cup frozen corn, thawed, drained |
1/2 cup green tomatillo salsa |
2 green onions, thinly sliced |
8 lettuce leaves |
Directions:
1. Rinse and drain beans well; Place in 2 quart casserole dish. 2. Add roasted red pepper salsa, corn, tomatillo salsa, and onions; stir to combine. 3. Cover and refrigerate 1 hour or up to 24 hours. 4. To serve, line serving platter with lettuce. Spoon bean mixture over top. Garnish with tomato wedges and sprouts, if desired. |
