Roasted Red Pepper, Corn and Black Bean Soup |

1 quart chicken broth |
1 (15 ounce) can black beans, rinsed and drained |
12 ounces roasted red peppers, drained and diced |
1 cup corn |
2 cups chopped onions |
3/4 teaspoon dried thyme |
1/8 teaspoon crushed red pepper flakes |
1/8 teaspoon allspice |
1/2 cup diced ham |
2/3 cup uncooked long grain rice |
salt and pepper |
Directions:
1. Combine all ingredients, except, rice, salt and pepper, in slow cooker. 2. Cook on high 4-6 hours, adding rice during the last 2 hours. Season to taste with salt and pepper. |
