My mother-in-law gave me this recipe recently; the lemon juice really gives an unexpected kick to the potatoes. Ingredients:
2 tablespoons lemon juice |
4 teaspoons olive oil or 4 teaspoons vegetable oil |
1/2 teaspoon thyme |
1/2 teaspoon garlic salt |
pepper |
6 small red potatoes, quartered |
Directions:
1. In medium bowl, combine lemon juice, oil, thyme, garlic salt, and pepper. 2. Add potatoes; toss to coat. 3. Place in lightly greased baking dish. 4. Bake, uncovered, at 450° for 40 minutes or until tender. |
