Super easy take on Greek roasted potatoes. They are so yummy and flavorful. Ingredients:
4-6 potatoes, peeled and cut into chunks (not too small) |
1 can of tomato soup |
half a can of water |
2 cloves of garlic, finely minced |
zest of 1 lemon |
juice of one lemon |
3 tbsp of olive oil |
dried oregano, thyme -- good size pinch, but rub herbs in hand to get flavors going |
salt and pepper |
Directions:
1. Preheat oven to 325 degrees. 2. Whisk tomato soup in a bowl with all ingredients except for potatoes. 3. Put potatoes in a deep casserole dish. Cover with liquid mixture. Toss gently to cover the potatoes. 4. Cover with lid. Bake for an hour. |
