Roasted Potato Salad

A really good alternative to the normal potato salad when you braai (BBQ) We love this in summer
Ingredients:
250g sour cream
2 cloves of garlic, finely chopped
1 small red chilli, seeds removed, finely chopped
pinch of salt
1kg baby potatoes
3 large red onions
2 tbsps oil
sea salt
freshly ground black pepper
3 sprigs of celery, roughly chopped
50g spring onions, roughly chopped
Directions:
1. Place sour cream in mixing bowl, add garlic and chilli, mix
2. Season with salt.
3. Cover and refrigerate for 3 hours.
4. Cut potatoes in half, don’t remove skin
5. Peel onions and cut into wedges
6. Place potatoes and onions in baking tray, drizzle with oil
7. Bake at 180ºC for 45 minutes, or until crisp
8. Remove from oven, season with salt and pepper
9. Let cool slightly
10. Place in mixing bowl
11. Add sour cream and celery and toss
12. Turn into serving plate
