I made this today for a teacher's luncheon, and it is so good! Simple, easy and delicious! Ingredients:
4 cups quartered unpeeled small red potatoes |
1 cup miracle whip |
2 hard-cooked eggs, chopped |
4 slices bacon, chopped, crisped and drained |
1/4 cup green onion, sliced |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Preheat oven to 450. 2. Place potatoes in large baking pan sprayed with non-stick cooking spray. Bake 30 to 35 minutes or until potatoes are tender and golden brown, stirring once. Mix dressing, eggs, bacon, onions, salt and pepper in large bowl. Add potatoes and mix lightly. |
