This dish is perfect with roasted chicken.The crispy outside creamy smooth inside and flavor make it a delicious way to eat potatoes. Ingredients:
2 sweet potatoes |
4 baking potatoes |
8 new red potatoes |
1/4 cup plus 2 tbsp olive oil |
1 tsp. dried thyme |
1 tsp. dried rosemary |
1/8 tsp. salt |
1/8 tsp. black pepper |
Directions:
1. Preheat oven 425 degrees. Peel and cube sweet and baking potatoes. 2. Scrub red potatoes cut and cube don't peel. 3. Boil potatoes in water. Lightly salt and cook for 5 minutes. 4. Spread the potatoes in a single layer on a large nonstick baking sheet. 5. Drizzle potatoes with olive oil and sprinkle on the herbs,salt and pepper. Roast until browned and crisp about 25 min. |
