Roasted Pork Tenderloin and Vegetables |

Light and Tasty cookbook recipe. I also add fresh mushrooms and peppers, or any vegetable you like to roast. Ingredients:
1 1/2 pound pork tenderloins |
2 pounds red potatoes, quartered |
1 pound carrots, halved and cut into 2-inch pieces |
1 medium onion, cut into wedges |
1 tablespoon olive or canola oil |
2 teaspoons italian seasoning |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Mix together salt, pepper and Italian seasoning. Rub pork tenderloin with 1 teaspoon of the olive oil, and sprinkle with 1 teaspoon of seasoning mix. Put vegetables into a large bowl and toss with remaining olive oil and seasonings. Arrange vegetables around pork. Bake, uncovered, at 450 degrees for 30-40 minutes or until a meat thermometer reads 160 degrees, stirring vegetables occasionally. |
