Roasted Pork & Sweet Potatoes |

My entire family loves this recipe. This is the only way they will eat sweet potatoes. This is a recipe that I altered from Pampered Chef. The original calls for half sweet potatoes & half russet potatoes but I love sweet potatoes... Ingredients:
3 1/2-4 lbs boneless pork loin roast |
2 teaspoons rubbed sage |
1 teaspoon dried thyme leaves |
1 garlic clove, pressed |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
3 lbs sweet potatoes (cut into chunks) |
Directions:
1. Preheat oven to 350 degrees. Mix together sage, thyme, garlic, salt & pepper. Rub all but 2 tsp over entire pork roast. 2. Spritz potato chunks with oil & toss with remaining herb mix. Put roast & potatoes in covered roaster & bake for 1 hr 15 minute bake uncovered for additional 15-30 min or til thermometer inserted in meat reads 165 degrees. 3. Let roast stand 10 min before serving. |
