Another fabulous delight loved by alll who like spicy food. I like this served over a spinach or cobb salad. It is so full of great flavor. Yummy. Ingredients:
2 poblano peppers roasted peeled and seeded |
1/4 medium red onion chopped |
2 tablespoons fresh lime juice |
3/4 cup olive oil |
1/2 cup spinach |
2 teaspoons honey |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. In a blender combine poblanos, onion and lime juice then blend until smooth. 2. While the blender is running add oil slowly until emulsified. 3. Add spinach and blend until smooth. 4. Add honey, salt and pepper. 5. Bring to room temperature before serving. |
