Roasted Plum Tomatoes With Herbs |

This makes a delicious side dish. Ingredients:
12 ripe plum tomatoes, washed, dried and halved lengthwise |
2 tablespoons extra-virgin olive oil, divided |
salt and freshly ground black paper |
1/4 cup chopped flat leaf parsley |
1 1/2 teaspoons chopped fresh thyme |
1 tablespoon minced garlic |
Directions:
1. Preheat oven to 425°F. 2. Line a large baking sheet with foil. 3. Place tomatoes on foil, cut side up. Drizzle with 1 Tbsp of oil and season with salt and pepper. 4. Roast in oven for one hour or until tomatoes are shrivelled and beginning to brown on the bottom. 5. Meanwhile, in a small bowl, mix remaining oil, parsley, thyme and garlic. 6. Remove tomatoes from oven and sprinkle herb mixture evenly over top. 7. Return to the oven for another 15 minutes or until the herbs are just beginning to brown. 8. Enjoy! |
