Roasted Peppers With Oriental Dressing |

This is a great salad to go with cold chicken or turkey. If you serve it warm, it is wonderful with grilled meats, or just a nice piece of crusty bread Ingredients:
2 red peppers |
1 yellow pepper |
1 orange pepper |
1/2 small red chilli |
1/2 small green chilli |
1 tsp grated ginger, fresh |
small bunch of spring onions |
4 tbsp soy sauce |
4 tbsp lemon juice |
1 tbsp white wine vinegar |
2 tbsp clear honey |
Directions:
1. Preheat the grill to hot. 2. Cut the peppers in half. 3. Place cut-side down on the grill rack and grill for 10-15 minutes or until the skins blaken and blister all over. 4. Cover with a clean damp tea-towel and leave to cool. 5. Halve, deseed and finely chop the chillies (wear rubber gloves). 6. Trim and slice the spring onions diagonally and place all the dressing ingredients in a bowl. 7. Mix well until thoroughly combined. 8. Remove the skins and seeds from the peppers, then cut into thick slices. 9. Spoon the dressing over the peppers and serve. |
