Roasted Peppers With Honey And Almonds |

I had friends coming over for a game of cards in my small garden and I remembered a few Tapas recipes I had from Spain. This worked great as finger food. Ingredients:
8 red bell peppers cut into forth and deseeded |
4 tbsp olive oil |
2 garlic cloves diced |
30 g sliced blanched almonds |
3 tbsp honey |
3 tbsp balsamic vinegar |
salt and pepper to taste |
Directions:
1. Preheat broiler to high. Place peppers with skin up in a single layer on a baking sheet. Cook 10 min until skin is blackened. Transfer to plastic bag and let cool. When they are cooled, peel the skin. 2. Chop pepper into stripes. Heat olive oil and cook the garlic until golden. 3. Mix garlic with honey, balsamic vinegar and salt and pepper. 4. Pour over the peppers. Add all except almonds. Arrange on plate. Arrange almonds on top. 5. Enjoy! |
