Roasted Peppers and Hominy |

This is such a wonderful and different side dish! I love it! The roasted hominy tastes sorta like popcorn to me. I love making this in the summer. Ingredients:
1 (15 1/2 ounce) can white hominy, drained |
1/2 green bell pepper, cut in 1 inch pieces |
1/2 red bell pepper, cut in 1 inch pieces |
1 small onion, cut in 1 inch pieces |
1 tablespoon olive oil |
garlic powder |
salt |
pepper |
italian seasoning |
1/8 cup parmesan cheese |
Directions:
1. Preheat oven to 450ยบ. 2. Spray baking sheet with cooking spray. 3. Arrange hominy and vegetables on pan. 4. Drizzle with oil and sprinkle with seasonings to taste. 5. Bake for 15 to 20 minutes, stirring occasionally. 6. Sprinkle with parmesan just before serving. |
