Seeding the tomatoes will enhance the appearance of these appetizers. Ingredients:
1 (7-ounce) jar roasted red bell peppers, drained and chopped |
6 ripe tomatoes, seeded and diced |
3 tablespoons shredded parmesan cheese |
2 tablespoons chopped fresh basil |
1 garlic clove, minced |
1/2 teaspoon coarse-grained sea salt or kosher salt |
1/4 teaspoon freshly ground pepper |
24 french bread slices, toasted |
Directions:
1. Combine first 7 ingredients; spoon 1 heaping tablespoon over each toasted bread slice. |
