This is an incredible side dish that goes so well with just about everything. Bursting with peppery and herby flavors. I have made this several times and for several occasiona dn it's always greatly received. Read more Enjoy. Ingredients:
4 red bell peppers |
1/3 cup olive oil |
2 tablespoons balsamic vinegar |
3 tablespoons fresh parsley and basil finely chopped |
1 clove garlic minced |
Directions:
1. Roast peppers over an open flame or in broiler turning frequently until skins are blistered. 2. Place in a plastic bag then close top and let sit 10 minutes. 3. Remove skins under running water then cut peppers in half holding over a bowl to catch juice. 4. Remove seeds and stem then tear lengthwise into strips and put in serving dish. 5. In a small bowl whisk pepper juice, olive oil, vinegar, herbs and garlic then pour over peppers. 6. Serve immediately or marinate at room temperature several hours. |
