Roasted-Pepper and Almond Mayonnaise |

This romesco-style sauce is good on grilled fish or vegetables as well as burgers. Ingredients:
1/2 cup mayonnaise |
1/4 cup drained bottled roasted red peppers, chopped |
1/4 cup salted roasted almonds |
1 garlic clove, smashed |
2 teaspoons sherry vinegar, or to taste |
1/8 teaspoon cayenne |
Directions:
1. Blend all ingredients in a blender or food processor until smooth. Chill, covered, 1 hour (for flavors to develop). |
