Roasted Onions Stuffed With Cranberry Jalapeno Cil...

These stuffed onions will add a new dimension to any table! So good with pork and beef! Be creative with the stuffing, So good.
Ingredients:
4 medium onions, unpeeled, with roots and top eighths trimmed away
1 tablespoon chopped cilantro
1 teaspoon minced jalapeno peppers (can use jarred ones)
2 generous pinches coarse salt
1/2 of 8 ounce package or 4 ounces cream cheese, cut into 4 blocks
dried cranberries
fresh lime juice
great with pork and beef
Directions:
1. In a pan, place a sheet of heavy duty aluminun foil, shiny side up
2. Arrange the 4 onions on foil
3. Roast at 400 degrees for about 1 hour, or when you can easily pierce top with a knife
4. Remove from oven
5. Meanwhile, while onions are roasting, put the jalapenos, cilantro and cranberries in a small bowl, sprinkle with coarse salt
6. Then roll the cream cheese chunks, slightly pressing in the jalapenos, cilantro, and cranberries to coat them
7. Squeeze lime juice over the chunks of cream cheese
8. With sharp knife slit open the tops of the hot onions with 2 cross cuts
9. With 2 teaspoons, push apart their centers
10. Drop a chunk of cream cheese in each onion,
11. Drizzle in any lime juice left in the bowl
12. Close up the onions around the cheese.
13. Serve hot
14. NOTE: Can make these onions savory, by adding thyme, sage, oregano, paprika, etc. Can omit the cranberries. If making them savory, add buttered, browned bread crumbs to top, after closing the onion. Delicious!
