ROASTED ONION GARLIC POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Benson Estate in Canton, Texas in 1987. Ingredients:
3 medium baking potatoes |
1 small white onion chopped |
3 cloves garlic |
1 tablespoon fresh parsley chopped |
1 teaspoon salt |
3 tablespoons olive oil |
1 teaspoon red pepper flakes |
Directions:
1. Wash and dry unpeeled potatoes then cut into cubes and dry with paper towels. 2. Place potatoes in an ovenproof baking dish then drizzle with olive oil and toss to coat potatoes. 3. Crush garlic with flat section of a knife then mince. 4. Place garlic in a bowl and add salt then mash with spoon until it becomes almost a paste. 5. Taste with the potatoes then add onions, parsley and red pepper flakes. 6. Toss to mix well then bake at 400 for 45 minutes stirring frequently. 7. Remove from oven and broil 4” from flame for 10 minutes |
