Roasted New Potatoes With Lemon Horseradish |

Delish! Especially good with beef. Can be made in oven or microwave! If you can't find the small new potatoes, use red potatoes and cut into wedges or thick slices. Ingredients:
1/4 cup butter |
1/2 teaspoon salt (or to taste) |
1/8 teaspoon pepper |
1 tablespoon prepared horseradish |
2 teaspoons lemon juice |
12 red potatoes, unpeeled except for 1/2 inch strip around center of each potato (1-1/2 pounds) |
1 small lemon, cut into 6 sliced, halved |
2 tablespoons chopped fresh parsley |
Directions:
1. Heat oven to 350ยบ. 2. In 2 quart casserole melt butter in oven 3-4 minutes. 3. Stir in salt, pepper, horseradish and lemon juice. 4. Stir in potatoes until well coated. 5. Cover; bake for 55-65 minutes or until potatoes are fork tender. 6. Garnish with lemon slices and sprinkle with parsley. 7. MICROWAVE: In 2 quart casserole melt butter on HIGH 50 to 60 seconds. 8. Stir in salt, pepper, horseradish and lemon juice. 9. Stir in potatoes. 10. Cover; Microwave on HIGH, stirring after half the time, until potatoes are fork tender (10-12 minutes). 11. Let stand 5 minutes. 12. Garnish with lemon slices and sprinkle with parsley. |
