Ingredients:
light vegetable oil cooking spray |
4 tablespoons dijon mustard |
2 teaspoons paprika |
1 teaspoon cumin |
1 teaspoon chili powder |
1/8-1/2 teaspoon cayenne pepper |
16 baby red potatoes or 4 medium potatoes, cut into chunks |
Directions:
1. Preheat oven 400F degrees. 2. Spray roasting pan with cooking spray. 3. Whisk all ingredients,except potatoes,in a bowl. 4. Prick potatoes with a fork. 5. Toss with the mustard mix. 6. Place in the pan. 7. Bake 45 minutes to 1 hour. |
