Roasted Mushrooms & Balsamic Onions |

From Wegman's Menu Magazine. If your store doesn't carry roasted balsamic onions, try a jar of sauteed onions. That would probably work well. Ingredients:
5 ounces shiitake mushrooms, sliced (3 cups) |
10 ounces baby portabella mushrooms, halved |
1 lb portabella mushroom, 1-inch dice (about 7 cups) |
10 ounces balsamic onions, drained and halved (wegman's italian classics) |
1/2 cup basting oil |
Directions:
1. Preheat oven to 450 degrees. 2. Combine mushrooms and onions in large bowl; season to taste with salt and pepper. Pour basting oil over mushroom mixture; stir carefully to combine. 3. Arrange mushroom mixture in single layer on baking sheet. Roast on center rack of oven for 15 minutes. Reduce heat to 350 degrees; cook 15-20 minutes until carmelized. |
